The fresh greens of the summer season are my favorite! We’ve been consuming a fair share of salads these days, so mixing up our toppings and dressings to keep it interesting. This recipe was inspired by a salad we enjoyed at our local market this spring and could not get enough of it! It’s made with crisp cabbage (use Napa cabbage if you can find it!) and crunchy veggies, but it’s the creamy peanuts-ginger dressing that makes it so good—you’ll want to put it on everything!
Creamy Peanut-Ginger Dressing
1/3 cup organic creamy peanut butter
1/4 cup hot water
2 Tablespoons organic Tamari sauce
2 Tablespoons organic white vinegar
1 teaspoon organic granulated garlic
1 lime, juiced
1 drop Ginger Vitality
1 drop Black Pepper Vitality
Combine all ingredients in a blender and process until smooth. Refrigerate until ready to serve.
